A bowl full of light and a creamy soup is perfect boost of protein. And this broccoli and almond soup comes with the goodness of broccoli and nuttiness of almonds, packed with their goodness.
Here's how you can make this soup.
800 Ml vegetable stock
700 gms broccoli
50 gms ground almonds (toasted)
250 ml skimmed milk
to taste salt
to taste freshly ground black pepper
*Make small pieces of broccoli in to small florets and steam it for about 6 – 8 minutes.
*Place steamed broccoli, veg. stock, handful of almonds, skimmed milk in a blender and blend it until smooth.
*Season it with salt and pepper.
*Now, pour the mixture in a pan and heat gently, serve hot in bowls and garnish with remaining toasted almond powder.
