Quinoa lentil salad recipe is a healthy salad made with superfoods like quinoa, asparagus, lentils and pomegranate. This salad is perfect for your breakfast and it can be made in a jiffy. You can drizzle some tangy mosambi juice and musturd dressing to balance the flavour.

Ingredients Of Quinoa Lentil Salad

1 Cup Quinoa

2-3 Baby carrots

Broccoli

Asparagus

Cauliflower

1 Cup Lentils

1 Cup Pomegranate

2 Spring onions

Coriander

For the dressing:

1 Mosambi (juiced)

1 tsp Mustard

2 Tbsp Olive oil

Lemon grass

1/2 Green chilli, chopped

4-6 Basil leaves

How to Make Quinoa Lentil Salad

*Add salt to boiling water and blanch the vegetables for almost seconds.

*Shift it in an another bowl with ice water and add soaked quinoa to a bowl.

*Then add lentils and pomegranate seeds to it.

*Add, chopped spring onions and coriander to it and mix them well.

*Add the blanched vegetables to the lentil and quinoa mix.
