There are many ways in which you can include ragi in your daily diet, and this stuffed ragi roti is perfect for light yet wholesome meal for managing your diet and blood sugar level. Not only it is healthy and fulfilling but also delicious and flavourful. The veggies stuffed in the roti are rich in fibre and antioxidants.
Ragi flour- 1/2 cup
Water- as needed
- Salt- As per taste
- Whole Wheat Flour- 1/2 cup
For Stuffing-
- Bitter gourd (chopped)- 1 tbsp
- Fenugreek leaves (chopped)- 2 tbsp
- Spinach (chopped)- 2 tbsp
- Cauliflower (grated)- 2 tbsp
- Green chillies (finely chopped)- 1 tsp
- Ginger (chopped)- 1/2 tsp
- Salt- As per taste
- Oil- 1 tsp
Prepare the dough:
1. Mix all the ingredients together to knead a soft dough.
2. Now cut the dough into circle balls to form a roti and keep it aside.
Prepare the stuffing:
1. In a bowl, mix all the vegetables, gingers, chillies, and salt to make a smooth stuffing.
2. Now roll one portion of the divided dough into a circle.
3. Fill some amount of stuffing in it and fold the dough from all sides and seal it.
4. Roll it again in the form of roti and cook it over a hot non-stick pan with ghee or oil .
5. Repeat the process with rest of the dough and serve hot.
